Our second store front in Oak Park opened September 2018.
It almost didn't happen.
We were second in line to covet this corner location on Oak Park Ave & Lake Street. First it was a no, then it was a yes, and the rest is history!
We outgrew ourselves.
Our bakery operation had always been located in Elmhurst. Baking out of two electric ovens in about a 300 square foot space. Once we opened our doors in Oak Park we ever so quickly realized that this was not going to work - it simply was not enough space for storage or production for two stores. Within 30 days of opening I was gathering quotes to build out the bakery department in Oak Park. We struggled for two grueling months with transportation, storage, and operational nightmares until I had the courage for the next step.
Take the leap.
Courageous was built off bootstrapping. For those of you that are unaware of what that means...you're in luck...I am an expert. I did not have risk taking investors or generous loans from banks. I had to save up and reinvest as much as I could. Two months in to opening Courageous Oak Park I was having a heart felt conversation with my family - on how I was going to pull this off. It literally came down to...I don't have a choice! So for my 32nd birthday I moved my bakery operation from Elmhurst to Oak Park.
